Week 5 - Sticky Toffee Pudding
For my sister-in-laws birthday I made sticky toffee pudding and it was delicious! The recipe calls for dates, but I left them out because eww. I did accidentally leave them in the oven for an extra five min so they were a little dry, but with the sauce to mop it up you couldn’t tell.
The sauce was really easy to make, and re-heated well.

Ingredients
1 ¼ cups chopped pitted fresh dates
1 tsp baking soda
2 ¾ oz butter, softened
¾ cup lightly packed light brown sugar
2 eggs
1 cup flour
Butterscotch Sauce
2 ¾ butter
1 cup lightly packed light brown sugar
¾ cup whipping cream





I enjoyed this a lot. Very sweet. I like dates a lot and they may have helped with the dryness of the cake. Maybe next time do half with so we can compare.
